Summer Salad

Who says a cheese straw can't be a crouton? Not to mention the fresh strawberries, creamy goat cheese, and sweet and salty candied nuts. Nothing beats a fresh crisp salad on a hot summer day, and this recipe gives you everything you need for the perfect bite every time.

Summer Salad

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 20 minutes

 

Ingredients

  • Large bag of spring mix

  • ⅓ cup strawberries (quartered) or cranberries

  • ⅓ cup crumbled goat cheese

  • ⅓ cup candied nut (pecans or walnuts work great)

  • Pinch of red pepper flakes

  • Squeeze of lemon juice

  • Balsamic Vinaigrette (to preference)

  • 1 bag of Snap Cheese Straws (crushed)
    Build it.

Instructions

  1. Wash and dry spring mix, wash and cut strawberries. With the palm of your hand or a wooden spatula, gently break up Snap Cheese Straws in the bag.

  2. In a large bowl, add spring mix, strawberries, goat cheese, and candied nuts, mix.

  3. Add balsamic vinaigrette, lightly toss the mixture until well combined. Add Snap Cheese Straws and gently mix.

  4. Plate salad, top with red pepper flakes and a small squeeze of lemon juice.
